To produce this flour the miller favours a careful blend of a rare single variety of English wheat called
Maris Widgeon, justifiably renowned for its excellent baking quality, its pleasing nutty flavour and
cheerful name, combined with top quality organic wheat from the continent, to give the strength and
robustness for outstanding baking results every time.

For every acre, Maris Widgeon yields almost half the amount of modern varieties, but its quality and
flavour are excellent.

Ideal for use as a general-purpose bread flour. Works well in bread makers.

Stone-grinding flour is a simple, traditional process in which all the organic goodness of wholemeal flour is retained, unlike
steel "roller" milling of white flour where the essential bran and germ is engineered away. The increased heat generated from
roller milling can damage the natural proteins that are essential to producing the finest breads and dough, as well as being
nutritional.
