Connoisseur Cambodia Organic Fair Trade Fragrant Jasmine Rice is a collaboration between Chopsticks Company Limited and a Cambodia local NGO Cedac. Cedac is community based. In the past decade, after the civil war, Cedac helped rebuild communities, and promote organic farming as well as fair trade. As a result, not only do the farmers go back to their way of life, but they can also avoid damaging their own health as well as their land due to the use of pesticides.
This agricultural project spans all provinces of the nation. Executives from Chopsticks visited 3 of the provinces, familiarized themselves with the communities in the project and their fair trade practice. To Cambodian farmers, every grain of rice is a hope: that their children can get to receive an education; that they can live with their family on their own land, and that they can have a better life.

- Dry process, also known as unwashed or natural coffee, originated from Africa. After harvest, the entire cherry is first cleaned and then placed in the sun to dry on tables or patios. Because the cherries would be under the influence of the weather, even minor affects from humidity could cause mildew to form on the beans, and then failure. Within 10-14 days, they are raked or turned by hand to ensure even drying as well as prevent mildew, producing the best beans.
- Coffee made from these choice beans are rich and fruity, with a mild and pleasant acidity.

 

What is Shade Grown Coffee?
- An age-old traditional growing method, considered to be the best for growing Arabica coffee trees.
- Without the need to remove the forests, coffee trees would thrive under the tropical rainforest trees. There would be no destruction to the ecosystem and the home to migration birds. Coffee flowers and cherries in the shade attract omnivores; thus, the shade in itself becomes a natural shelter and food source for animals, creating another ecosystem. This is one of the most environmentally friendly ways of farming.

Tips for sea salt usage:

Sea salt vs Table salt
Table salt is mined from underground salt deposits. It is heavily processed to eliminate trace minerals.  It is therefore not as flavourful as sea salt.  Additive, anti-caking agent is added to prevent clumping.


However regardless of the benefits of sea salt, we should keep sodium consumption between 1,500 and 2,300 mg a day for a healthy adult. People with high blood pressure should aim at lower intake of sodium.
