Shiitake mushroom is also called “winter mushroom” if it grows in winter. As it grows slower in winder, it is fleshier and has a rich taste. Compared to fresh shiitake mushroom, the dried mushroom has a richer taste; it is because the proteins in the mushroom break down into amino acids and ergosterol into vitamin D under exposure to sunlight.

Research findings has shown that the shiitake mushroom contains polysaccharides, which enhance the immunity to resist bacteria also the immune system; and they help prevent cancers as well. Meanwhile, the mushroom has a property of resisting bacteria and viruses, meaning that it could help fighting various diseases caused by viral-infection like hepatitis.

The shiitake mushroom prevents cirrhosis, lowers the cholesterol and blood lipid level. In addition, it contains a high amount of anti-oxidant, which resists ageing and maintains the health of body cells.
